Ach, die Ernte. Tatsächlich bin ich fast durch – für den Moment zumindest, denn ich hoffe schon, dass ich noch einmal irgendwo ernten darf. Wenn ich die Äpfel meiner Mama verarbeitet habe.

Well, it’s harvest time. I’m almost done, at least for the moment. I hope I’ll be able to harvest again.  As soon as I’m done with my mother’s apples. 

Ich habe Apfelstrudel gemacht, denn ihn kann ich einfrieren und zwar sowohl als Milchrahmstrudel (als Mehlspeise) als auch als Wiener Apfelstrudel (Kaffeetrinken).

I made some apple strudel, because this is something I can put in the fridge. 

Für den Strudelteig nehme ich ca. (denn eigentlich schütte ich drauf los) 300g Mehl, 1 Ei, ein bisschen Öl, einen TL Essig, etwas Salz und soviel lauwarmes Wasser, dass sich der Teig noch sauber von der Schüssel löst und nicht matschig wird.

For the dough I take about 300g flour, one egg, a bit of oil, a teaspoon of vinegar, some salt and as much warm water, that the dough can release from the bowl. 

Bevor der Teig ruhen darf, muss man ihn richtig durch prügeln. Wenn ich ihn auf den Tisch knalle, wackelt das ganze Haus. Dann decke ich ihn zu und lasse ihn eine gute halbe Stunde liegen. Zeit, eine große Schüssel Äpfel zu schnippeln.

Bevor the dough may rest, you have to beat it. Whenever I beat it on the table, the whole house is shaking. Then I cover the dough with cloth and let it rest for half an hour. Time enough, to get a big  bowl of apples chipped. 

 

 

Zum Strudel ziehen habe ich ein altes Tischtuch eingemehlt.

For stretching my strudel dough I dusted an old table cloth with flour. 

Ich ziehe zuerst über die Handrücken, dann ein bisschen in der Luft und schließlich auf dem Tischtuch, da darf Jakob endlich helfen.

I start stretching the dough on the back of my hand, then in midair and finally on the cloth, where Jakob can eventually give me a hand.

Der Strudel muss so dünn gezogen werden, dass man das Muster des Tuchs durch sieht. Dann kommt zerlassene Butter drauf und darauf dann die Äpfel.

You have to stretch the dough as thin as possibly, so that you can see the pattern of the table cloth through the strudel dough. Then I put melted butter on it and after that the apples. 

Weil die Äpfel noch sauer waren, kommt Zucker drauf.

Because the apples were not completely ripe, I add some sugar.

Dann wird das Tuch eingerollt und damit auch der Strudel.

Then you wrap the strudel with the cloth. 

So sieht der Strudel eingerollt aus. Nun kommt er entweder in eine Auflaufform (Milchrahmstrudel) oder wird in Alufolie gewickelt  (Wiener Apfelstrudel). Auf jeden Fall friere ich meine Strudel erst mal ein, denn ich will etwas Sommer im Winter haben.

Und weil ich Strudel so mag, schicke ich sie zu Frollein Pfau!

Here comes my strudel rolled – up. Now you can either put it in a pan or wrap it in aluminum foil. Either way, I put any strudel in the fridge at first, because I want to have some summer in winter.
